From the most experienced chef to the least experienced cook in a diner, no one is exempt from the risk of a kitchen fire. However, technological advances in kitchen fire suppression systems are making kitchens safer for kitchens and those who use them.
What is a suppression system
Kitchen fire suppression systems are designed to be installed within a restaurant’s ventilation hood and are comprised of either:
- Wet chemical systems; or
- Dry chemical systems
Wet chemical systems are the most common and are very effective in extinguishing fires that are based on any type of fat or oil. These types of fires can be difficult to extinguish using conventional techniques, and can cause the situation to be worse if water is applied to put out the fire.
The wet chemicals used in the suppression system are heavy with an alkaline substance that quickly neutralizes and eliminates oil-based fires.
Dry chemical systems are effective against flammable liquid fires that are mostly superficial. Because the chemicals are dry, they are safe to use around electrical equipment. The chemicals work to remove oxygen from the source of the fire, thus interrupting its progression.
Both methods of suppression work to immediately cool the hot surfaces, preventing the risk of re ignition or flare-ups.
